How to Cook It
Cast Iron Method (Recommended):
- Thaw in refrigerator overnight. Pat completely dry with paper towels.
- Season generously with kosher salt and black pepper on all sides. Let sit at room temperature 30 minutes.
- Heat cast iron skillet over high heat until smoking. Add a high smoke-point oil (avocado or grapeseed).
- Sear 3–4 minutes per side for medium-rare (internal temp 130–135°F). Add butter, garlic, and thyme in the last 2 minutes and baste continuously.
- Rest on a cutting board for 5 minutes before slicing against the grain.
Grill Method: High heat, direct flame. 3–4 minutes per side. Same rest time applies.
Storage & Thawing
- Keep frozen until ready to use
- Thaw in refrigerator overnight — never on the counter
- Once thawed, use within 3–5 days
- Do not refreeze after thawing
- Vacuum-sealed for up to 12 months in the freezer
