How to Cook It

Classic Dutch Oven Braise (Recommended):

  1. Thaw in refrigerator overnight. Pat completely dry. Season generously with salt and pepper on all sides.
  2. Heat a Dutch oven over high heat with a splash of oil. Sear the roast on all sides until deeply browned, 3–4 minutes per side. Don’t rush this — the crust is where the flavor starts.
  3. Remove roast. Sauté diced onion, carrots, and celery in the same pot until softened. Add garlic and tomato paste, cook 1 minute.
  4. Deglaze with red wine or beef broth, scraping up all the browned bits. Add roast back in. Add enough broth to come halfway up the roast. Add fresh thyme and rosemary.
  5. Cover and braise in a 325°F oven for 3–4 hours until fork-tender. The meat should shred easily when pulled.
  6. Rest 15 minutes before serving. Strain and reduce the braising liquid for a rich pan sauce.

Slow Cooker Method: Sear first (don’t skip), then cook on LOW for 8–9 hours with broth and aromatics. Fall-apart tender every time.

Storage & Thawing

  • Keep frozen until ready to use
  • Thaw in refrigerator overnight — never on the counter
  • Once thawed, use within 3–5 days
  • Do not refreeze after thawing
  • Vacuum-sealed for up to 12 months in the freezer
